Colombia Pacamara

This delicious coffee is a display of how good coffee can be when all the pieces come together. It is full of complex and vibrant fruit forward flavors and a clean, sweet finish. We get notes of blackberry, strawberry and honey comb.

Amazing tasting coffee takes four things things: good genetics, ideal growing conditions, expert processing and quality roasting.

Genetics: Coffee varietal is the base fromwhich each bean gets its potential. Pacamara is one of the best tasting varietals of coffee. These large beans are packed full of unique flavors, an ever present sweetness and a heavy body. While Geisha tends to get the glory, Pacamara is responsible for our favorite coffees each year.

Growing conditions: This coffee was grown on small farms high in the mountains of Colombia. The conditions are ideal for slowly growing high quality coffee.

Processing: An extended 64 hour fermentation was used on this coffee. The extra fermentation time leads to more complex flavors and a cleaner finish.

Roasting: We are using a light roast on this coffee to highlight the fruit flavors and acidity. The result is a bright coffee that tastes best as filter coffee. We have a limited amount of this coffee and expect it to only be around for a few weeks.
